Description:
Chinook salmon is the queen of the salmon family and the largest of the Pacific salmon. It inhabits the waters of the Far East, the Pacific Ocean, and the Sea of Okhotsk and Bering Sea. Its tender, coral-pink flesh is streaked with fat and rich in vitamins A, C, E, and K, as well as valuable micronutrients (zinc, manganese, iron, selenium, copper) and macronutrients (calcium, magnesium, sodium, potassium, phosphorus), and, of course, polyunsaturated fatty acids. Chinook salmon is the fattest of all wild salmon, with a fat content of 12-14%, giving the meat incredible juiciness, tenderness, and butteriness. The flavor is very rich, creamy, and delicate, without the slightest hint of harshness or bitterness. This is a case where the product is so good on its own that it doesn't require complex recipes.
Cold-smoked Chinook salmon is excellent. It's smoked using natural wood chips. Yukola is a smoking method in which the fish meat is cut into squares, allowing the aromatic smoke to penetrate all channels and impart as much of the subtle flavor and aroma of natural alder wood chips as possible.
