Cold-smoked Chinook salmon steak is a complete lunch or dinner. Chinook salmon is a rare wild salmon with incredible flavor and a delicate texture. The tender, coral-pink meat is streaked with fat and rich in vitamins A, C, E, and K, as well as valuable micronutrients (zinc, manganese, iron, selenium, copper) and macronutrients (calcium, magnesium, sodium, potassium, phosphorus), and, of course, polyunsaturated fatty acids. Chinook salmon is the fattest of all wild salmon, with a fat content of 12-14%, giving the meat incredible juiciness, tenderness, and butteriness. The flavor is very rich, creamy, and delicate.
