Having learned the line at which the meat, while remaining juicy, gives up excess moisture, the manufacturer emphasized the natural aromas and flavors of salmon. By adding salt as a basis for conveying the entire palette of flavors, it was possible to achieve a balance in which the saltiness is felt only in the aftertaste.
